Peppermint II
First and foremost, I want to throw a huge shout out to the future Mrs. Majewski for handling herself with such calm, cool composure when Tom popped the question. Well done.
I wish there was more I could write about the pig roast…. Some huge dramatic story would be great, but there just isn’t one. Everything went smoothly. Peppermint proved to be a delicious pig from High View Pastures. There just isn’t anything simpler than roasting a pig over an open flame.
I always find myself a little unsettled whenever I cook a whole animal, whether it's something as small as a Cornish game hen or as big as a Berkshire. The majority of the time I can distance myself from the fact that what I’m eating was a breathing animal. It’s much harder when you are looking in the eyes of the animal that was slaughtered to feed you and your slightly intoxicated friends.
The guilt washed away right around the time I started stripping meat from the belly (see bacon). It did help to know that Peppermint had the chance to live a legitimate pig’s life. She was never in a sow crate, didn’t have her tail cut off, and never was forced to eat another of her kind. She just hung out until her time came. I’m almost a bit envious. Could do with out the bolt gun at the end though.

Did her duty
It is good to know that Peppermint fulfilled her calling. I gotta imagine that she did it well. That bacon you write about sounds soo good.
So tell me, do you just use briquettes when grilling something as big as a pig? And then are you buying them by the pickup truck load? or can you just use regular wood?
